An easy and delicious warm meal for a cold winter night. Winter is here and one of the best things about the cold months is you get to bring back some favorite meals that you don’t make during the summer months. One of our family favorites is beef and egg noodles. It’s fairly cheap, easy to make, and feeds the whole family. What you will need for this meal:
1. Beef for stew meat
2. Two cans of Campbell’s Beef Broth
3. One can of Campbell’s Beef Consomme
4. Two packages of Grandma’s Egg Noodles, found in the frozen food section of your grocery store
5. 3-4 cubes of Beef Bouillon
6. 3 tablespoons butter
How to make it:
1. I buy beef stew meat at Sam’s club. Of course, it comes in an oversized package, so I split the package in half. You can use half now and I freeze the other half and store it in a Food Saver vacuum-sealed bag for later use. If you have ever shopped at Sam’s Club or Costco you know the pieces of meat are a little big, so I use meat-cutting scissors and cut the meat up into smaller pieces. Next, you can season the meat with your favorite seasonings. I use Adolph’s seasoned tenderizer and Kinder’s Buttery Steakhouse.
2. In a large skillet melt the butter over medium heat and add the meat. Cook until done mixing often. When done, turn the burner to simmer and simmer while you are preparing the broth and noodles. This will make the meat nice and tender.
3. In a large pot, while the meat is cooking combine 2 cans of beef broth, 1 can of beef consomme, and beef bouillon cubes. Top it off with water until the pot is about 3/4 of the way full. When the meat is almost done, turn the burner on high and bring it to a boil. Note…I sometimes add a can of Campbell’s French Onion soup to mix it up a bit.
4. While waiting for the broth to boil it is time to prepare your noodles. Place the 2 packs of egg noodles in the fridge in the morning to unthaw. Start to separate the noodles by hand just pulling them apart.
5. Once the broth is boiling, add half of the noodles. Next, add the meat to the pot and top off with the rest of the egg noodles. Turn the heat down to medium-high and boil for about 15 minutes until the noodles are cooked.
When the noodles are fully cooked it is time to enjoy them. You can just dish it out into a bowl and top it off with fresh ground pepper. If you have leftovers, not to worry. Just store it in a microwave-safe container in the fridge and enjoy it later. I have found the best way to heat it up in the microwave is to heat it for about a minute and a half, take it out and stir it up. Microwave another minute and a half and should be good to go.
